1 Bakery baguette
3 tablespoons + 2 teaspoons olive oil
1 teaspoon kosher salt, divided
1 teaspoon ground pepper, divided
8 peeled/deveined large shrimp, tails removed
1 Hass avocado
1 lemon, for zest/juice
- Preheat oven to 350°F. Slice bread into 8 (1/2-inch) slices, then coat with 3 tablespoons oil. Place bread on baking sheet; season with 1/2 teaspoon salt and 1/2 teaspoon pepper. Bake 5–6 minutes or until toasted.
- Toss shrimp with remaining 2 teaspoons oil and 1/2 teaspoon salt and pepper. Place shrimp on baking sheet; bake 10 minutes and until shrimp turn pink and opaque.
- Peel, pit, and slice avocado; toss with lemon juice. Top bread slices with avocado, shrimp, and lemon zest.
