Ingredients

2 teaspoons fresh lime juice
1/2 teaspoon chili powder
1/2 teaspoon sugar
1/2 teaspoon kosher salt
2 cloves garlic, finely chopped
4 salmon fillets (about 1 1/2 lb), skin removed
Lime wedges, for serving

Steps

  1. Preheat grill or grill pan on medium. Combine all ingredients (except salmon and lime wedges).
  2. Coat salmon with spice mixture. Grill salmon 3–4 minutes on each side and until fish separates easily. Serve with lime wedges.

Always check fish for bones and cook to an internal temperature of 145°F.

Other Preparation Methods

  • Bake: Preheat oven to 400°F. Place 1 1/2 lb salmon fillets on baking sheet. Combine 1/4 cup mayonnaise and 2 tablespoons Parmesan cheese; spread over salmon. Top with cracker crumbs; bake 12–15 minutes and until fish separates easily.
  • Sauté: Preheat nonstick sauté pan on medium. Place oil in pan, then add 1 1/2 lb salmon fillets; cook 3–4 minutes on each side and until fish separates easily. Remove fish from pan. Add 1/4 cup creamy balsamic dressing and 2 tablespoons honey to pan; cook 30 seconds, then drizzle over fish.
