Ingredients

Nonstick aluminum foil
4 slices bacon
3 tablespoons pure maple syrup, divided
2 tablespoons brown sugar, divided
1 1/2 lb fresh salmon fillets, skin on
1 teaspoon dry mustard
1/2 teaspoon kosher salt
1/4 teaspoon cayenne pepper

Steps

  1. Arrange oven racks so that one is in lowest position and another is in the upper half of the oven. Preheat oven to 325°F.
  2. Line a baking sheet with foil. Place bacon on pan in single layer (wash hands). Mix together 1 tablespoon maple syrup and 1 tablespoon brown sugar; brush mixture on bacon slices. Bake on lower rack 15–17 minutes or until browned. Allow to cool completely and chop coarsely. (reserve 1 tablespoon pan drippings). Increase oven temperature to 400°F.
  3. Transfer fish to the same baking sheet skin side down. Brush fish with the reserved bacon drippings. Combine remaining 2 tablespoons maple syrup, 1 tablespoon brown sugar,  mustard, salt, and cayenne pepper in a small bowl. Brush fish with half of the brown sugar mixture. Place salmon on upper rack of oven and bake for 10 minutes. Brush fish with remaining glaze and continue to roast for 3–5 more minutes or until fish is opaque and 145°F. Top with chopped bacon. Serve.
