Parmesan Crusted Fish

Parmesan incrusted Cobia, by Ken Roy

Works with any fish and is delicious.
1. Lay one layer of fillets in a glass baking dish. 
2. Mix mayonnaise with fresh grated parmesan cheese. Appx 60/40 mix. You want it spreadable but as much cheese as you can get.
3. Spread mixture on fish fillets. 
4. Sprinkle on any seasoning you want. I use slap yo mamma.
5. Sprinkle on a layer of fresh grated parmesan cheese on top.
5. Cover with foil and bake 15 to 25 minutes at 350 deg. for 1/2″ to 3/4″ inch fillets. Test with a fork.
6. Remove foil and turn oven on broil to brown cheese on top. Keep a close eye, its easy to burn doing this.
