Cooking Sequence

  • Prepare grapefruit salad (10 minutes)
  • Prepare sandwiches and serve (15 minutes)

 California Shrimp Sandwiches

Ingredients

3 cups frozen salad shrimp
Large zip-top bag
1/4 cup mayonnaise
1/4 cup peach salsa
1 tablespoon dried parsley
1 tablespoon crumbled blue cheese
4 Bakery French Hamburger Rolls

Steps

  1. Thaw shrimp (place in large zip-top bag, seal tightly, and place under cold running water 5–10 minutes).
  2. Combine remaining ingredients (except rolls) in medium bowl. Drain shrimp thoroughly and pat dry; stir into salsa mixture.
  3. Slice rolls in half. Spoon shrimp mixture onto half of rolls; assemble sandwiches and serve.

 Grapefruit Salad

Ingredients

8 oz salad blend with veggies (lettuce, cabbage, carrots, snow peas, and radishes)
1/4 cup matchstick carrots
2 large ruby red grapefruit (rinsed)
1 cup grape tomatoes (rinsed)
2 tablespoons french salad dressing
2 tablespoons honey
1/2 teaspoon celery seeds

Steps

  1. Place salad blend (about 3/4 bag) and carrots in salad bowl. Peel and cut grapefruit into bite-size pieces; add to salad. Cut tomatoes in half (if desired); add to salad.
  2. Combine remaining ingredients in small bowl. Pour over salad; toss to coat and serve.
