Ingredients

2 teaspoons fresh chives, finely chopped
1 lb large peeled/deveined shrimp, tails removed, coarsely chopped
1/4 cup cooked bacon pieces
1 tablespoon minced garlic
1 (10.75-oz) can condensed cream of shrimp (or seafood) soup
1/2 cup whole milk
1 tablespoon sriracha
4 oz pasteurized processed bar cheese
4 oz shredded cheddar cheese
Bagel chips (or baguette slices), for serving

Steps

  1. Chop chives and shrimp. Preheat medium saucepan on medium 1–2 minutes. Place bacon and garlic in pan; cook 3–4 minutes, stirring occasionally, or until garlic is lightly browned. Stir in shrimp; cook 3 minutes.
  2. Combine soup, milk, sriracha, and chives; add to shrimp mixture. Bring mixture to a simmer; simmer 3 minutes, stirring occasionally, to blend flavors.
  3. Remove pan from heat; stir in cheeses until completely blended. Serve with bagel chips or baguette slices for dipping, if desired.
