Pompano is good a lot of ways. Here is one that I came up with that adds some variety to your pompano dinners. This is easy and fast to prepare. It brings asparagus into your meal. And mushrooms, tomatoes and onion as well.

Ingredients:
Florida Pompano
Fresh Cilantro
asparagus cuts
sliced fresh mushrooms
1 medium tomato, chopped
A variety of peppers, cut for frying

Jalapeno slices, if desired

You can even consider sausage cut up for the pan or even chicken to combine with the fish. Up to you.

One onion, thinly sliced, with long strips
4 garlic cloves, finely chopped

Sprinkle lightly with soy sauce
1 tablespoon Key West Lime Juice, if you like lime use more than that.

Directions

In pan, melt 1/2 stick of butter; heat over medium-high heat. Add fish, onion, garlic, cilantro and asparagus; cook and stir 2 to 3 minutes or until fish almost flakes with fork.
Carefully stir in remaining ingredients. Cook until fish flakes easily with fork
