When the storms have let us get farther offshore we found nice Amberjacks in depths of 120’ or more.  Get them while you can!  The season has about a month and a half left and then it closes back down on November 1st.  One of my favorite fish meals is sashimi fresh of the back loin of Amberjack.  Sweet, firm and without the rice component, it is very healthy.  I also like how fast it is to prepare.  I just cut out a section of the loin about five inches long, I wash thoroughly and put it in freezer for about 50 minutes.  Then cut across the loin, thin slices and dip in wasabi and soy and bam!  Love it!

Out in these depths we are still finding nice size Red Groupers and Gags.  The bonus is the African Pompanos that could be hanging over the bottom structure.  They are a little wary and a spearfishing line shaft it a must.  They fight hard and will pull off without a well-placed shot.  The reward is great, as African Pompano filets are very tasty.  We have seen some of our divers get them in the upper 30 and lower 40 pound class in 2019.  Most of the time they are hanging closer to the surface than the bottom and they love to cruise just over the colder water of the thermocline.
