For a tender and moist bite of FRESH FISH, we place the filets on a bed of sliced lemons. There is NO NEED TO TURN the fish; just smother in olive oil, pepper, and salt (we love lime frost sea salt), close the lid on the charcoal grill, and cook until fish is tender and flaky… (approx. 20-25 minutes with grill lid closed. Resist the temptation to open the lid.) The lemons will be charred, but your fish will be perfect, and NOT STUCK to the grill. Lift the fish off the lemon bed with a spatula and serve! Approximate temp is 250-350.
•(Side note: The flame here is from a few pieces of hickory added to white coals.. that we add for a smoke flavor just before adding the lemons and fish)
